Keta salmon, also called chum or dog salmon, is a drier fillet because of its lower fat content and is one of the lesser-known salmon species. Keta is one of the best values in wild Alaska salmon and its mild character keeps it approachable to consumers who are a tad shy of full-flavored seafood. It is mild in flavor, and it's meaty and lightly colored. Keta Salmon is best to pair with Chardonnay, Pinot Gris, Semillon and Riesling.
